What type of evidence can we offer the embassy officer to show we are working at a client?

Answer

Generally, the consulate wants to see a letter from the end-client confirming the details of the project, and containing contact information so that the consulate can independently verify the information. If the end-client is unable / unwilling to provide such a letter, then you will need to provide as much corroborating evidence as possible (similar to an H1B RFE), but it increases the risk of the consulate delaying or even refusing the visa issuance.
